The fish is immediately processed by our highly skilled team of artisan processors. Fish are filleted and sectioned into portion-size pieces.
Step #3: We freeze our fish to -30 degrees in our commercial blast freezers
Next, we smoke our smoked salmon via a small-batch method in a traditional smoker. All of our fish is blast frozen and vacuum-packed to lock in freshness.
