Grilled Fiesta Halibut with Corn Salad

Served atop a roasted corn salsa salad mix and drizzled with a spicy fresh avocado dressing, our grilled Wild Alaskan line-caught Halibut is seasoned with a fiesta spice mix! It's a party in your mouth!

Ingredients:

For the Spicy Avocado Cilantro Dressing:

  • 1 avocado
  • 1/4 C cilantro
  • 2 cloves garlic
  • 1/2 jalapeño
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp cumin
  • 2 Tbs lemon juice
  • 3 Tbs olive oil
  • 3-5 Tbs water 

For the Corn Salad:

  • 2 C corn, roasted
  • 1 pint cherry tomatoes, halved
  • 1/2 medium onion, chopped
  • 1 jalapeño, diced
  • 1/4 C fresh cilantro, chopped
  • 1 Tbs lemon juice
  • Salt and pepper, to taste
  • 5 oz arugula
  • 1 avocado, sliced

For the Halibut:

  • 2 halibut fillets
  • 2 tsp olive oil
  • 1 Tbs. fiesta spice mix (recipe below - or use your favorite taco seasoning) 
    • Ingredients
      • Tbs paprika
      • 2 Tbs cumin
      • Tbs garlic powder
      • Tbs onion powder
      • Tbs chipotle powder
      • 1 Tbs oregano
      • 1 Tbs salt
      • 1 Tbs pepper
    • Instructions
      • Stir all spices together
      • Store in an airtight container

Instructions:

Spicy Avocado Cilantro Dressing:

  1. Blend together ingredients, adding water 1 TB at a time to reach desired consistency.

Corn Salad:

  1. Toss together corn, tomatoes, onion, jalapeño, cilantro and lemon juice
  2. Season with salt and pepper
  3. Serve over arugula and top with avocado.

Fiesta Halibut:

  1. Brush halibut with olive oil and season with fiesta mix
  2. 
Heat grill or grill pan medium heat and brush with oil
  3. Add halibut and cook for 5-6 minutes. Flip and cook another 5-6 minutes, until cooked through.
  4. Serve halibut over corn salad drizzled with dressing
