
Grilled Alaskan Halibut with Compound Butter

Ingredients:
For the Halibut
- 2 - 4 Catch Sitka Halibut Filets
- 1 Tbsp. Unsalted Butter
- 1 Tbsp. Olive Oil
- 2 Tbsp. Lemon Juice
- 2 Lemons (cut in half)
- 2 Tbsp. Mrs. Dash Herb and Garlic Rub
- Salt and Pepper
- 1 Stick of Unsalted Butter
- 1 Tbsp. Lemon Zest
- 1 tsp Old Bay Seasoning
- 1 Tbsp. Fresh finely chopped dill
Directions for Compound Butter:
- In a small bowl mix all ingredients together.
- Then place mixed ingredients on a piece of plastic wrap and roll into a log.
- Store in fridge
Directions for Halibut:
- Preheat grill to 450 F.
- Add lemons to grill. Then, place a grill proof pan on the grill and add olive oil and butter. Heat until bubbling then add lemon juice.
- Season halibut filets with rub. Place filets in pan and grill for 10 minutes per side or until golden.
- Reduce temperature to 350 F. and continue to grill until the internal temperature reaches 125 - 130 F.
- Remove from grill and immediately place compound butter on top of seared halibut.
- Serve with grilled lemons and top with salt and pepper

Compound butter can be stored in the fridge for up to 2 weeks and in the freezer for 2 months.
