Ingredients:
  • Any species Catch Sitka Seafoods' fish
  • 2 C Veggies, roughly chopped (we used: broccoli, cauliflower, red peppers, onion, & whole garlic cloves)
  • Extra Virgin Olive Oil
  • Garlic powder with parsley
  • Sea salt & pepper to taste
Directions:
  1. Preheat oven to 450F degrees.
  2. Put rough chopped veggies onto a sheet pan, drizzle with 1 Tbs of the olive oil, toss until evenly coated. Sprinkle with 1 tsp of the garlic powder with parsley and toss again.
  3. Roast in the oven 25 to 45 minutes depending on veggies, whether you are baking or broiling your chosen fish and your own taste.
  4. When the veggies are done, remove pan from oven, season the veggies with sea salt & pepper.
  5. Make room in the middle of the pan for your fish.
  6. Lower the oven to the recommended temperature for the species of fish you are baking. Conversely you may choose to broil instead of bake at this point.
  7. Rub the fish with olive oil and season with the garlic powder with parsley, sea salt and pepper.
  8. Place the fish on the pan, in the middle of the veggies, and cook for the recommended time (See: Catch Sitka Seafoods Time & Temperature Cooking Guide).
  9. Check your fish before the end of cooking. Fish should be opaque and flake easily with a fork when done.
  10. You can eat this right from the pan, or get fancy and put the veggies on a platter, top fish and viola! Dinner is served!
