Parmesan Truffle Lingcod

Parmesan crusted Catch Sitka Seafoods Lingcod over creamy spinach with tomatoes.

Parmesan Truffle Lingcod 

This is one of those feel good meals. The kind that is warm, hearty and packed full of flavor. Try it tell us how you like it!


For the Lingcod:

  • 2 pieces of Catch Sitka Seafoods Lingcod
  • 1/4 C Mayo
  • 1/2 C Fresh Parmesan, grated
  • Dash of Truffle Powder (We like to use Trader Joe's Truffle Powder, but any will do!)

For the Creamed Spinach:

  • 1 Tbsp. butter
  • 2-3 cloves garlic, minced
  • 2-3 pounds fresh spinach, hearty stems removed
  • 1/2 cup heavy cream
  • 1/4 cup shredded Parmesan cheese or freshly grated Parmesan
  • 1/2 C Cherry Tomatoes 
  • Black Pepper and Salt, to taste


For the Lingcod: 

  • Preheat oven to 450 F. 
  • Spray baking sheet with cooking spray.
  • Mix together the mayo and Parmesan cheese.
  • Coat the Lingcod with the mixture and sprinkle on truffle powder.
  • Place fish on prepared baking sheet.
  • Bake about 15 minutes until nicely browned and fish flakes easily.

For the Creamed Spinach:

  • Melt butter in large saucepan over medium heat; add minced garlic and cook, stirring for 30 seconds.
  • Wash spinach, and add it to the pan, cooking it in the water that clings to it after washing. Cook until its wilted and tender, approximately 3 minutes.
  • Drain spinach well after cooking (do not omit this step). 
  • In a bowl, mix heavy cream and parmesan cheese. 
  • Return spinach to saucepan; add heavy cream mixture. Cook until hot and cheese has melted. Add in cherry tomatoes. 
  • Season generously with black pepper and salt, to taste. 

Add the creamed spinach to your plate and place the cooked Lingcod on-top of spinach.
